Production area

This ‘vast’ appellation brings together four great regions; Yonne to the north, with its fresh, mineral wines, followed by the Côte d’Or, with its rounder, deeper whites, the Côte Chalonnaise with its pleasant wines, and lastly the Mâcon region to the south, with a range of styles varying with the individual soil and exposure.
Our white Burgundy is made from grapes harvested on different terroirs selected to give a pure expression of Chardonnay in keeping with the House style.

Origins

Burgundy’s soil is clay-limestone based, yet it varies considerably from village to village. It gives the winemaker a part all the more important to play when selecting the grapes : his knowledge will lead him in his selection, to combine the terroirs and chisel the aspects he is looking for : fruit, complexity, roundness, etc. This is particularly true for the Chardonnay varietal which is strongly influenced by the “taste” of the terroir.

Tasting notes

COLOR: Yellow, with green highlights, brilliant and limpid.
NOSE: Complex, dominated by notes of white flowers and fresh fruit.
PALATE: An excellent dry wine with a fine balance between freshness and mellowness.

Vinification and maturing

Once the grapes have been sorted, the must is extracted by pneumatic pressing, then cooled and left to settle for 24-48 hours. The juice is then brought to a temperature of 16-18°C to start alcoholic fermentation.
The wine is then aged on fine lees for 6 months.
70% in stainless steel tanks to preserve the wine's freshness and the fruity, floral aromas of the Chardonnay. The remaining 30% in oak barrels, to give the wine its texture and richness.

Food and wine pairing

This wine can be enjoyed alone, as an aperitif, or during the meal with deli meat platters or fishes with creamy sauces.

Vintage : 2022

The 2022 vintage was once again marked by intense weather, with frost, heatwave and drought. The vines came through all these episodes unscathed, giving this vintage a special beauty, with generous quantities and a quality that will appeal to wine lovers the world over.
