Production area
Saint-Romain is a village appellation in the Côte de Beaune. The area of appellation covers 97,16 ha of which 59,74 ha are white grapes and 37,42 ha are red. Though it is located at the foot of a high cliff, Saint-Romain sits high up. This was one of the first places where the Celts and Gallo-Romans planted vines in Burgundy.
Origins
The vineyards are planted on the gentle slope where the vines thrive in excellent soils. The combination of marls and limestone layered with clay are perfect for cultivating the Chardonnay grape. The vines face south/south-east at altitudes of between approximately 280 and 400 metres.

Tasting notes
COLOR: Pale yellow with golden highlights.
NOSE: Discreet, elegant aromas of white flowers and lightly toasted citrus fruit.
PALATE: A harmonious wine marked by beautiful minerality. Elegant aromas are combined with a subtle integration of barrel ageing.
Vinification and maturing
The grapes in this vineyard were hand-picked and sorted as soon as they arrived in the winery. They were then pressed in a pneumatic press which allows for optimum extraction of the juice without damaging the fruit.
Vinification and ageing took place in oak barrels using 40% new oak.
The wine was aged on lees without stirring for 9 months in oak barrels. It was then racked and blended in stainless steel tanks where it remained for 1 month to complete the ageing process.
Food and wine pairing
Perfect with white meats and poultry in light sauce, veal and cheeses like Brillat-Savarin and Cîteaux.

Vintage : 2023
The 2023 vintage has been disrupted by a capricious wather all along the year. Despite a warm winter, an unstable spring, and a summer marked by heat pics, cool weather and stormy showers, this vintage offered Burgundy an abundant and gourmet harvest as well as fruity and expressive wines.
