Vinification and maturing

The grapes were hand-picked with good maturity on September 2nd, 2017, and sorted manually as soon as they arrived at the winery. They were then pressed in a pneumatic press which allows for perfect extraction of the juices without over pressing the grapes.
Vinification and ageing took place in wooden barrels with a proportion of 60% new oak,to complicate and help the wine to acquire the ideal structure.
The wine is aged on the lees for 15 months with 2 stirrings. The wine was fined and very gentle filtered before being bottled in December 2018.

Vintage : 2017

2017, a happy combination of quality and quantity.
This is the only region that enjoyed this rare combination. And yet the vegetative cycle was upset: The winter was very cold and there were early frosts in spring. Conditions were optimal for rapid flowering, but there was hail and the drought in the summer.

Harvesting was very early, starting in the August heat. After years of low yields, the grapes were abundant with thick skins that promised lovely color. There were significant disparities in terms of maturity between the whites and reds and between the Côte de Nuits and the Côte de Beaune. But excellent health and easy vinification meant a great vintage for those who got their planning right.
